What prep to you hate to do? Love to do?

I use to dislike cleaning oysters. I love to clean artichokes.

Chips of any types are my guilty pleasure!

If you weren't a chef what occupation would you like to try and why?

I would like to be a navy officer and be able to travel every single day around the World.

What or who inspires your culinary creativity and why?

My passion for culinary started in my mother’s bakery. I loved to see bread, focaccia, pizza, tarts, cakes, etc....... growing from flour and water to a magnificent finished product, light and nice golden brown. Every day I'm at work I like to spend time in the bakery and to see what they are creating and I encourage the cooks to follow the recipes like the baker do.
